- A little over 1/4 cup yogurt
- 1/8 cup olive oil
- Vegetables:
- 2 zucchinis, shredded
- 1 carrot, shredded
- 1/2 red pepper, diced

- 1-2 slices red cheddar, sliced into thin strips
Instructions
- Preheat the Oven: Preheat your oven to 180°C (350°F).
- Prepare the Vegetables: Place the shredded zucchini and carrot in a clean tea towel and squeeze out excess moisture. This step is crucial for preventing soggy muffins.
- Mix Wet Ingredients: In a large bowl, combine the eggs, milk, yogurt, and olive oil. Whisk until well combined.
- Combine Dry Ingredients: In a separate bowl, mix together all the dry ingredients (whole wheat flour, oat flour, corn flour, baking powder, thyme, garlic powder, sea salt, and black pepper).
- Combine Mixtures: Gently fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Add Vegetables and Cheese: Fold in the shredded zucchini, carrot, diced red pepper, chopped green onions, and thin strips of cheddar cheese into the batter.
- Prepare Muffin Tin: Scoop the muffin batter into a silicone muffin mold or a greased muffin tin.
- Bake: Bake in the preheated oven for 30 minutes, or until a fork inserted into the center comes out clean.
- Cool and Enjoy: Let the muffins cool slightly before removing them from the tin. Enjoy warm or store in the freezer for later!
