Ingredients
- 4 large bell peppers, halved and deseeded
- 300g lean ground turkey
- 2 cups fresh spinach, chopped
- 1/2 cup cooked quinoa or rice (optional for added carbs)
- 1/4 cup tomato sauce
- 1/2 cup shredded mozzarella or dairy-free cheese
- 1 tsp paprika
- Salt and pepper to taste
Directions
- Preheat oven to 200°C (400°F). Arrange bell pepper halves on a baking tray.
- Heat a skillet over medium heat. Cook turkey until browned, then stir in spinach until wilted.
- Add cooked quinoa or rice (if using), tomato sauce, paprika, salt, and pepper to the turkey mixture.
- Fill each pepper half with the turkey mixture, topping with shredded cheese.
- Bake for 20-25 minutes or until peppers are tender and cheese is melted.
